Borlotti Bean Minestrone with Basil Walnut Pesto

My love affair with fresh shell beans started at a farm stand piled high with borlotti bean pods. Bringing sacks of them home, I split each pod open to pop out the pretty pink and white beans—about a cup’s worth for every pound of pods.

Simmered in salted water, the fresh beans took only 30 minutes to cook to creamy tenderness (!) So quick, compared with the overnight soaks and long cook times necessary with dried beans. Add to this their mildly nutty flavor and good protein content (15 grams per cup) and you’ll understand why I fill my vegetable-packed minestrone with fresh shelled borlotti beans whenever I get the chance.

Fresh shell beans are in peak season late summer through fall, but grocery stores may randomly have them fresh (and frozen) at other times of the year. Beyond borlotti (which are also known as cranberry beans,) the shell bean family includes other velvety varieties: lima, and cannellini, for example, which would also work well in this satisfyingly nutritious soup. Creamy Broccoli, Ham + Cheddar Soup

If there’s a nice, big, spiral-sliced ham in your autumn-meal-planning future, that means you’ll also be trying to figure out how best to use the meaty bone.  When I’m in that situation, first thoughts go to split pea soup. But, since nobody in my household likes split peas, I shift to ham-enhanced dishes they do like: Broccoli, ham and cheddar quiche for example. So, then I think, “Why not make a soup with those delicious flavors?”

This, then, is the tasty result–even better in my opinion, than the quiche that inspired it.  I did add one special ingredient: half a pound of mushrooms. Blended with caramelized onion, the mushrooms add even more depth and creaminess to the finished soup. Served with a nice loaf of crusty bread for dunking, this makes a very satisfying meal. Butternut Bisque

Matching the golden hues and spicy scents of autumn, this velvety-smooth butternut bisque makes a nice start to a meal or works well for a light lunch. As with other traditional bisques, ours includes shallots, garlic, and vermouth for depth of flavor. A swirl of crème fraiche adds richness. And for textural contrast, we’ve finished the soup with a crunchy topping of roasted squash seeds and quick fried sage leaves.  You can either peel and cube the squash for slightly quicker roasting or simply slice the butternut in half and invert it.

Cauliflower Potato Leek Soup
